Espresso Chocolate Pudding Recipe

2 cups milk
5 Tbsp sugar
2 Tbsp cornstarch
1 Tbsp unsweetened cocoa
Pinch of salt
1 bar (3 1/2 oz) sweet dark chocolate with espresso, broken in pieces
1 tsp vanilla extract
1. Put milk, sugar, cornstarch, cocoa and salt in a medium saucepan and whisk to blend. Bring to boil over medium-high heat, stirring frequently with the whisk and going into the corners of the saucepan. Whisk while boiling for 1 minute.
2. Remove from heat and stir in chocolate and vanilla. When chocolate is melted, stir to thoroughly blend.
3. Scrape pudding into a bowl. Cover surface directly with plastic wrap to prevent a skin from forming. Chill at least 2 hours, or until cold. Divide into bowls and top with your favorite whipped cream. Enjoy!
